Abstract

In this thesis, through analyzing and recognizing the acknowledgement about the school meal service health care according to the introduction of HACCP system for secured safety of the mealing, focusing on the enterprises related with the school mealing.
The subjects were divided the improvement of the school mealing health care work¡¯s quality and the development of the school mealing administration, furthermore, so supply the basic data for introducing the effective school mealing health care system through supplementing the possible reform in the current school mealing condition.
The survey date was performed from March, 6th to March 25th, 2000, and the material subjects were 139. The analysis of the survey data was performed using the frequency analysis, one-way ANOVA, and Pearson relative coefficient,and utilizing the 5% of statistic meaning level.
The result of this thesis showed that most people said that ¡¯We do know about HACCP system.¡¯, but about the reason that they did not be appointed as the HACCP applied shop, most of them said that ¡¯Because we do not know the HACCP system.¡¯ or ¡¯Because we do not know the application process for being appointed as the HACCP applied shop.¡¯ So, those results pointed that it is needed that the systematic and continuous advertisement should keep on. Additionally, all the enterprises including the mealing material supply enterprise, machine and device supply enterprise, and entrust mealing operation enterprise said that they are willing to be appointed for the applied shops, but most of them said that about the introduction time as ¡¯All the Schools and the enterprises should introduce them gradually.¡¯
In the school mealing health care, all the subject enterprises said that the vegetables disinfection which would be adopted without the heating process was the most difficult one. The most improvement-needed part, in the school mealing health care, is ¡¯the support from in administration organization¡¯ and in order to apply the HACCP system, the supplement of the facility and equipment should be performed.
The main reason that the school mealing administration is not well performed is the lack of time which is said by the mealing device supply enterprises, the machine and device supply enterprise said the lack of recognition, and the entrust mealing operation enterprise said the lack of recognition, and lack of time, thus it is shown that sustained information supplying and education about the performable health care system through the concrete study for the application of the HACCP system is needed.
